As long as you're using fats and oils sparingly in your cooking and preparation, it would be fine to use any one of the following ';good'; oils. All of the following oils are low in saturated fats and trans fats. Some have high concentration of monounsaturated fats such as olive oil. Choose corn oil, safflower oil, sunflower oil, soy oil or canola oil if you wish to fry foods as these oils have higher smoke point. It is best not to fry with olive oil as its smoke point is only about 190C/375F.

The following ';bad'; oils contain high percentage of trans fat or saturated fats. Some, such as coconut oil, even contain more saturated fats than animal products!

AVOCADO OIL: It is rich in monounsaturated fatty acids and Vitamin E.
MACADAMIA NUT OIL: Macadamia nuts may be a useful adjunct in the dietary management of elevated cholesterol levels and other risk factors of coronary artery disease. Macadamia oil averages about 80 percent monounsaturated fat.
EXTRA VIRGIN OLIVE OIL: The beneficial health effects of olive oil are due to both its high content of monounsaturated fatty acids and its high content of antioxidative substances. Olive oil offers protection against heart disease by controlling LDL (';bad';) cholesterol levels while raising HDL (the ';good'; cholesterol) levels. No other naturally produced oil has as large an amount of monounsaturated as olive oil -mainly oleic acid.
FLAXSEED OIL: Flax Seed Oil contains omega-6 and omega-9 essential fatty acids, B vitamins, potassium, lecithin, magnesium, fiber, protein, and zinc and also provides approximately 50% more omega-3 oils than what you could get from taking fish oil - Just do not cook with this oil - Use it as a salad dressing base instead!
WALNUT OIL: It contains high levels of monounsaturated oils (omega 9) which help to keep your arteries supple, and also high levels of polyunsaturated oils (omega 3 and omega 6) which help to reduce inflammation, stabilise hormones and improve the skin.
RICE BRAN OIL: The most balanced and versatile oil on the market and closest to the AHA recommendations. Rice bran oil is a superior salad, cooking, and frying oil which leaves no lingering after taste. The high smoke point prevents fatty acid breakdown at high temperatures. Its light viscosity, allows less oil to be absorbed in cooking, reducing overall calories. It mixes better in salad dressings and improves the taste of baked goods, providing cholesterol reduction, nutritional and anti-oxidant value.

It all depends on what you are using it for. Some oils are better to cook with, and others (such as flax seed) shouldn't be heated, but are very healthy when used unheated, such as on salads. Contrary to what many think, virgin coconut oil is actually one of the healthiest oils to use, and it has a reasonably high smoke point. I have been getting some really high quality coconut oil at Tropical Traditions. Avoid canola oil for any use. It is really awful stuff. There is a great article you can read online called ';The Great Con-ola';. I would also recommend reading ';The 150 Healthiest Foods on Earth';, by Jonny Bowden. There is a lot of information on various oils, and it is a very informative, interesting, and unbiased book for anyone who is interested in eating healthy - very much worth purchasing.
Olive oil is one of the best cooking oils to use as far as health is concerned. This is because oleic acids (fatty acids) from olives have a long carbon tail with many ';kinks'; in it which keep the molecules from stacking up like pieces of a jigsaw puzzle in your arteries, unlike trans fats, etc.
butter is the only oil with cholesterol and all fats contain the same calories and fat grams. it's a matter of taste. olive oil is good but you wouldn't use it to bake a cake with. don't believe the hype that canola oil is bad for you... always check your sources on snopes.com.... oil is oil... it's all the same!
