I heard on this radio show about how cooking oil mixed with potatoes creates this cancerous substance. I am forgetting the name of it, but I remember a shocked listener calling in and commenting saying that she works in a lab at the university of guelph and works with this same substance, and she needs to have full body protective gear...
Can anyone verify what substance i am talking about and if it is true or not?

The chemical you are referring to is called Acrylamide.
It is found in a large variety of fried foods- fries among them. I think it had something to do with natural sugars in the food being converted to Acrylamide at high temps.

Yes, and no. It seems to depend on the oil and the cooking method, both. Here is a very informative article which should leave you better equipped to make good choices (see link below):
French fries are supposed to convert to a cancer causing substance. It may be a form of plastic. I'll do some research and report what I find, if anything.
